Cranberry Almond Chicken Salad

Many times as Moms, either stay at home or working, you don’t have the time to whip up something healthy and delicious for dinner.
Make-ahead dishes like chicken salad are a good way to have a hearty dinner ready and waiting.
Being able to make things a day or so ahead that will store well in the refrigerator and can relieve some of the “what can I make for dinner?” stress.
Here’s a new twist on an old recipe. With fall approaching, it is kind of hard to think about making chicken salad, because we tend to think of it as a summer dish. But this recipe adds the wonderful flavors of cranberries and almonds making this chicken salad not only healthy but so delicious.
Ingredients:
5-6 Boneless skinless chicken breasts (salted, peppered and baked)
2-8 ounce cups of fat free plain yogurt
1 package of Ocean Spray Craisins (dried cranberries)
1 tablespoon of mayo ( a little more depending on the moistness you want)
1 package of almonds (toasted)
1 small onion (finely chopped)
Salt and pepper
Directions
- Dice or shred your chicken into small, bite-sized pieces (whichever you prefer).
- Add all the ingredients into a mixing bowl.
- Mix well.
- Refrigerate until ready to serve.
TIP: Serve on spring mix with mandarin oranges drizzled with balsamic dressing or as an appetizer on mini Hawaiian Sweet rolls.
TIP: This is a great dish to take to a party…there is never any left when I do. Enjoy!
